A Delicious Weekend

Hello everyone!  Hope you all had a fabulous weekend!  My was a very great, delicious  one indeed 🙂

It started off great with a 55 min. spin class.  Then I got to wear one of my new tops from Express that I’m loving…

Then it was time for lunch at our one and only fav spot for us girls…Fresh Choice!

Salad with broccoli, carrots, bell peppers, beets, peas, tomatoes, green onion, and croutons

Followed up with dessert…round #1

And then round #2 at Nubi Yogurt!  Have you caught on to our routine yet 😉

Peanut butter and vanilla fro yo with Butterfingers, Heath Bar, Kit Kat, Reese’s pieces, and a cheesecake bite. We also stole a cone and chopped peanuts from Fresh Choice and had that on the side with it too!

Dinner was at the parentals.  No pics were taken but I can tell you that it was all delicious and was a perfect ending to a Saturday evening.  The boys had grilled salmon and the girls had salads with avocado, garbanzo beans, carrots, green onion, hard boiled eggs, and croutons – all enjoyed with a side of roasted potatoes.  Dessert was none other than more ice cream!  It was delish too and a new flavor…Triple Cookie Fudge Sundae!

So good and if you haven’t tried it yet you must…we all gave it a thumbs up!

Mom did snap one photo of the hubby and I enjoying the evening.  I love love my parents patio…relaxing with the family while watching the sunset by the water is pure heaven…

Yes I’m in my comfies…and don’t you like hubbies Ray Ban’s…lookin’ fly 😉

Sunday was another relaxing day filled with some errands and then ended with watching the Red Sox and Yankee’s game…yes hubby is a Yankee fan, but he has every right to be since he’s from New York…and it makes for a lil friendly East Coast, West Coast rivalry 😉

Sunday’s I like to take off from picture snapping, however I had to document the deliciousness hubby prepared for us last night…burgers!  And they weren’t our typical turkey burgers, they were good ole beef burgers and every ounce of it was juicy goodness…

Beef burgers (85/15) on a Whole Wheat English Muffin with onion, tomato, and ketchup with a side of broccoli salad – my ultimate fav side and I know my mom and sis are drooling over that right about now 😉 Side salad of carrots and bell peppers.

There really is something spectacular about eating a “real” hamburger, not a turkey one, that is just purely delicious. I really do love the taste of beef and when you’re craving that iron it really does leave your body and (taste buds) happy…a delicious weekend indeed 🙂

Although the weekend is over, I continued my delicious eats with this mornings breakfast…

Cinnamon Raisin English Muffin with 2 tbsp. PB2, topped with a sliced banana. Side of 3 egg whites.

Monday’s are a busy one for me so I better get to work! Hope you all are having a great start to your week…see ya tomorrow! 🙂

    LOVE a good burger. In fact your post may have me buying ground beef after work haha What did you put in that Broccoli salad? It looks really good…. kind of like broccoli slaw?

    I go crazy with burger toppings…. avocado, crumbled blue or feta, pepperjack cheese, caramelized onions and mushrooms… a few months ago we fried and egg in the CENTER of our burgers. It was posted on Serious Eats. They were amazing. Next we want to try peanut butter burgers… those are supposed to be amazing and are on menus everywhere!

    Our weekend was pretty delicious. I made an awesome baked corn dish from EatLiveRun, and we went to our favorite breakfast spot yesterday morning. I always get an egg white omelette and they always load it up with like an entire avocado. Serious deliciousness.

      Thank you Sarah for the compliments! 🙂 And I love it when I read a blog post and it stirs up a craving in me…like overnight oats! 😉

      I wish I was the one that made the broccoli salad but it was the pre-made kind at Safeway from their deli counter. You’re right, it’s more like a slaw and I think the base was mayo, but very lightly done. And along with the slaw and broccoli, it had bits of raisins and bacon in it – so good!

      I love all the toppings you mentioned, and the hubby actually put blue cheese on his burger last night! I’m not a big blue cheese fan (unless on steak salad) so I went without…but a fried egg in the center of a burger?! Wow, can you come over here and make ’em for us sometime?! 😉 Sounds delish!

      How funny you mentioned peanut butter burgers! I was just reading my latest issue of Food Network Magazine last night and one of the features had restaurants different styles of hamburgers – one of which was the “Guberburger” – the peanut butter hamburger!! Hubby wasn’t so sure about it, but I definitely want to try it!

      Wow an egg white omelette with an *entire *avocado…sign me up! Sounds like a fun weekend with a definite good amount of delicious eats 🙂

    Love that top! Ahh I’ve been getting so jealous whenever I see posts in the blog world about these fabulous fro yo places- I can’t find one around where I live at all! Alas the search continues 😉

      Oh girl I feel for you…anytime I see blog posts with fro yo I instantly get a craving for it so I can’t imagine how you must feel without one by you! It took my town awhile to pick up on the self serve fro yo trend so keep hope and maybe you’ll get yours soon! Or you could open you’re own 😉

    I haven’t had a burger in a way long time…but that is because I no longer eat meat 🙂 I do indulge in veggie & black bean burgers though and they are delish! I’m not really a salad girl, but that huge salad you had looks so amazing!

      I have yet to make a black bean burger but have been dying too since I hear how delicious they are!

      I love my salad beasts…and I have to say what makes it better is sauteing the veggies to make it a *warm *salad…I actually don’t like cold salads that much so maybe trying making a warm one next time! 🙂

    I LOVE a good burger! If I am eating a burger, I go all the way with cheese and maybe some sauteed onion! YUM.

    I had some great food this weekend…I made homemade Bolognese sauce! It was delicious. Have a good week!
